This pumpkin bread is moist, fluffy, sweet and delicious! This recipe does include oil, however this can easily be replaced with applesauce. Also this recipe is quite sweet so cutting back on the maple syrup is also an option.

Ingredients

Wet Ingredients

  • 1 tablespoon flaxmeal
  • 2.5-3 tablespoons water
  • 1.5 cups homemade pumpkin puree (or canned)
  • 1 cup maple syrup
  • 0.5 cup olive oil (or sub applesauce)
  • 0.25 cup soy milk

Dry Ingredients

  • 1.75 cups wholemeal spelt flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 2 teaspoons all spice
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves
  • 0.5 cup mixed dried fruit

Topping

  • 0.5 cup pumpkin seeds

Directions

  1. Preheat oven to 180 degrees celsius- add baking paper to a loaf pan
  2. Combine flax meal and water in a small dish, leaving aside to thicken
  3. In a large bowl, add pumpkin, maple syrup, oil (or applesauce), flax egg, and soy milk until smooth
  4. Add the flour, salt, nutmeg, all spice, ground cloves, baking soda, baking powder and stir until just combined. Add the mixed dried fruit
  5. Pour batter into the prepared loaf pan and top with pumpkin seeds
  6. Bake in the oven for about 1 hour and 15 minutes until toothpick inserted in the centre comes out clean
  7. Enjoy warm on its own or with your favourite toppings
